Baingan Bharta

Ingredients
- 4 nos Small Brinjals
- 2 Nos Tomato (Big)
- 2 Nos Onion (Big)
- 3 Nos Green chilli
- 1 tsp Red chilli
- 1 tsp Turmeric
- 2 Nos Red chilli
- 1/2 cup Coriander
- 1 tsp Ginger- garlic paste
- 1 tbsp Ghee
- 2 tbsp Oil
- As per taste Salt
A simple yet delicious form of baingan (brinjal) without much effort.
Direction
Preparation
- Finely chop brinjals and keep them in water.
- Finely chop tomatoes.
- Finely chop onion & green chillies.
- Finely chop coriander.
Method
- Heat oil in pressure cooker, add onion and green chilli, sauté till golden brown.
- Add tomatoes, ginger – garlic paste, turmeric, red chilli and salt. Stir fry on medium flame for 5 mins. Add brinjal & stir fry for 2 mins.
- Add ½ cup of water and pressure cook for 3 whistles
- Open the lid and mash with ladle till no lumps are left.
- Cook on low flame till oil separates.
- Heat ghee in separate pan and add whole red chilli. Let it turn a little black. Pour over the bharta.
- Add coriander, mix well and serve hot.
