Chicken Samosa
For the filling:-
  • 1 lb (½ kg) chicken kheema (ground chicken)
  • 2 medium onions (chopped)
  • 3-4 green chillies (chopped)
  • 1 tsp salt
  • 1 tsp grated ginger
  • ½ tsp garam masala
  • Handful chopped mint (pudina)
  • Handful chopped cilantro (coriander leaves)
  • ½ tsp paprika (kashmiri red chili powder)
  • ¾ tsp chaat masala
  • 2 tbsp oil
For the dough:-
  • 2 cups all purpose flour (maida)
  • 1 tsp salt
  • 2 tbsp oil
  • ¾-1 cup water
  • Heat oil and add the onions. Saute until golden. Add chicken kheema, salt, ginger, garam masala, green chilies, mint and cilantro. Mix, cover and cook for 7-8 minutes.
  • Add paprika and chaat masala. Mix well. Set aside to cool.
  • Make a soft dough of all purpose flour, salt, oil and water. Roll out and cut into equal portions.
  • Roll out each portion into 6” diameter. Roll those into 12” diameter thin tortilas.
  • Heat both sides for 1 minute. Cut the sides and make a square. Cut that in half to make 3” piece strips each.
  • Make a paste of flour and water.
  • Fold the strips into triangles and fill the cooked chicken. Seal with the flour paste to make a triangle. Repeat for all the strips.
  • Fry on medium heat until golden.
  • Makes about 10-12 samosas.
