Restaurant Style Chicken Rada Recipe



  • Chicken- 600 grams
  • Onions- 5 big
  • Tomatoes- 3 medium
  • Ground ginger garlic- 2 tbsp (1 inch ginger and 12 garlic cloves)
  • Green chillies- 2
  • Coriander leaves- 2 tbsp
  • Turmeric powder- 1/2 tsp
  • Red chili powder- 4 tsp
  • Coriander powder- 1/2 tsp
  • Chicken masala- 1/2 tsp
  • Salt to taste
  • Prepared masala- 1 & 1/2 tsp
  • For preparing masala:
  • Black peppercorns- 8
  • Clove- 4
  • Cinnamon- 1 medium stick
  • Small Cardamom- 3
  • Big cardamom- 12 seeds
  • Bay leaves- 4 small
  • Jeera- 1 tsp


  • In a pressure cooker, add oil and heat it a little then add in chopped onions and fry them till golden brown.
  • Meanwhile, for preparing masala dry roast cumin seeds, cinnamon, small cardamom, black peppercorns, bay leaves and big cardamom seeds on a tawa each separately and grind them.
  • Once golden brown add ground ginger garlic along with some water to the onions and fry till the smell of ginger and garlic is gone.
  • Now add tomatoes, turmeric powder, red chili powder, salt, coriander powder and mix and fry (bhuno) them on medium high heat till the tomatoes soften.
  • Add chicken and bhuno the chicken for 10 minutes on high heat by adding little water at a time.
  • After 10 minutes add chicken masala, mix well then add water and cook the chicken for 1 whistle on high heat and switch off the flame.
  • After 15 minutes open the lid, add slit green chillies along with the prepared masala (1 and 1/2 tsp) and cook the chicken for last 10 minutes on medium low heat.
  • Add chopped coriander leaves, mix and serve immediately.
