Ingredients for Samosa Dough

Plain flour 1 Cup
Pure ghee 2 tbsp
Carom seeds (ajwain) 1 tbsp
Salt as per taste

Ingredients for Samosa stuffing

Boiled & mashed potato 4 big
Boiled green peas 1/2 cup
Whole coriander seeds 1 tsp
Fennel seeds 1 tsp
Ginger-green chilli paste 2 tsp
Chat masala powder 1 tsp
Cumin seeds 1 tsp
Finely chopped coriander 2 tsp
Aamchur powder 1/2 tsp
Salt as per taste
Oil for deep frying

A samosa is a fried Indian snacks filled with spiced potatoes, onions, peas, spices, etc. It is made in different shapes mostly triangular.


For Samosa dough

  1. In a bowl add plain flour, add ghee, carom seed, salt & mix well.
  2. Add water and knead to make a stiff dough.
  3. Cover & keep aside.

For Stuffing

  1. In a broad pan heat oil and add cumin seeds, coriander seeds & fennel seeds. Saute for 30 seconds.
  2. Add ginger-green chilli paste & saute for 30 seconds.
  3. Add mashed potato, green peas & cook for 2 mins.
  4. Add chaat masala, aamchur powder, & salt. Mix well & cook for 3 mins on medium flame.
  5. Add coriander, mix well & cook for 1 min.
  6. Transfer in to a plate. Let it cool down & divide in to 8 portion.

For making Samosa

  1. Divide the dough into 4 equal portion.
  2. Roll out the portion into a 6 inches diameter circle.
  3. Cut it horizontally in to 2 equal parts.
  4. Take a portion & use water on edges to make a cone.
  5. Pinch the edges to seal it.
  6. Add stuffing & with help of water seal the open portion.
  7. Repeat the process to make all samosa.
  8. Heat oil in the deep pan & fry till golden brown.
  9. Serve hot with sauce or green chutney/imli chutney.
