Kheer is a traditional rice pudding made by boiling rice, milk and sugar, it is flavored with cardamom, saffron, cashews, pistachios or almonds. It is typically served during a meal or as a dessert.

Ingredients

  • 1 Litre ‏Milk
  • 150 gram ‏Sugar
  • 50 grams ‏Rice
  • 10 – 15 Strands ‏Saffron
  • 2 Nos ‏Cardamom
  • 10 – 12  Nos ‏Almond
  • 10 -12 Nos Cashew nuts
  • 1/2 cup Raisins

Directions

Preparation

  1. Soak rice for 2 hours and grind into coarse paste.
  2. Crush cardamom seeds.
  3. Soak Saffron in warm milk for 2 hours.
  4. Cut Almond & Cashew nuts into slivers.

Method

  1. Mix rice paste in cold milk and put on slow flame, stir continuously.
  2. Cook for 10 minutes or till the rice are cooked properly.
  3. Mix sugar and continue stirring.
  4. After the mixture turns thick add cardamom powder, almond, cashew nusts & raisins.
  5. After 5 minutes add saffron mixture and stir for another 1 minute.
  6. Pour in bowl.
  7. Garnish with Almond & Cashewnuts slivers and refrigerate it for 2 hours or serve hot.
